Dido La Universal 2022 is an organic red wine made from a measured coupage of garnacha (majority), merlot, cabernet sauvignon, and syrah, selected from a 10-hectare estate located in Falset (Tarragona) on degraded granite soils with a sandstone structure that suddenly changes temperature according to thermal fluctuation, favoring the ripening of the vines.
For its production, whole fruits undergo a brief maceration and fermentation begins with non-selected yeasts to preserve the structure and aromatic complexity. The resulting wine undergoes mixed aging in French oak barrels (40%) and cement amphoras (the remaining 60%), with the aim of enhancing the fruity character and preserving freshness.
Sara Pérez (Mas Martinet) and René Barbier (Clos Mogador) created the Venus La Universal winery in 1999, determined to produce in the promising Montsant area, before the denomination was officially founded. The firm produces quality wines betting on organic farming, with absolute respect for the environment. They work their terroir with native varieties garnacha and cariñena, accompanied by foreign varieties such as syrah, cabernet sauvignon, or merlot.
Dido La Universal 2022 is a young red wine from the D.O. Montsant that combines the winemaking mastery of Sara Pérez and René Barbier, impeccable vineyard work based on the principles of organic viticulture, and magnificent raw materials. Dido La Universal is a wine that exhibits a bright and clean cherry red color.
On the nose, it unfolds aromas of ripe wild berries intermingled with notes of sweet spices and balsamic hints. Mountain herbs combine with memories of mandarin peel.
On the palate, it is a fruity, fresh, and light red wine. With present but well-integrated tannins, vibrant acidity, and earthy memories. Very easy to drink. Full of purity, juicy, and balanced.
