Cullerot 2023 is a wine made with an ancestral winemaking method but with a modern and excellent result. A white wine that aims to grow and stand out in a traditional red wine area; hence its name "cullerot" or tadpole in Valencian. Pedro ximénez, macabeo, verdil, merseguera, malvasía, and chardonnay from old vines, at 600 meters altitude, are combined in a red wine aged in clay amphorae on its fine lees for 6 months, with unparalleled purity and freshness.

General Information

Cullerot 2023 is the flagship white wine of Celler del Roure. This "tadpole," as it says on its label, is an exceptional blend of pedro ximénez, macabeo, verdil, merseguera, malvasía, and chardonnay (some native to the Levante region) from the vineyards of the Les Alcusses estate, located 600 meters above sea level. Its creator, Pablo Calatayud, signs a complex, fine, and unique white; but above all, natural and unpretentious.

Celler del Roure is a family winery whose current owner is Pablo Calatayud. Together with his father, in 1996, he began cultivating vineyards on a 20-hectare estate in Moixent. They planted tempranillo, merlot, and cabernet sauvignon, which were the fashionable grapes at the time, and along with the monastrell grape variety, they formed the basis of their first wines. In 2006, the family bought 40 more hectares of vineyards in Moixent. On this land, an old underground winery with 97 clay jars was discovered. This changed the way some of their wines were made and led to the recovery of some of their native grapes. Thus, the three estates that make up the current Celler del Roure winery are located at an average altitude of 550 meters, with sandy-loam and clay-limestone soils, where varieties as diverse as mandó (recovered), monastrell (native to Valencia and Alicante), syrah, cabernet sauvignon, merlot, and petit verdot, among others, have been cultivated.

Cullerot 2023 falls under the D.O. Valencia. For its production, manual harvesting is done in 15 kg boxes, and the grapes are transferred to a sorting table after total destemming. The selected fruits undergo a 4-hour maceration in a pneumatic press, followed by natural cold settling. The vinification is completed with fermentation and lees work in ancient clay jars. Aging for 6 months in 2600-liter clay jars culminates in a white wine with intense aromas, fresh, with citrus nuances, and expressive, ideally accompanying salads, appetizers, seafood, red meats, and all kinds of rice dishes.

On the palate, it is fine and elegant, with a Mediterranean character and spicy touches. Notes of hinojo, anís, and laurel over a balsamic background.
