Cuesta de las Liebres 2021 is the most iconic single-vineyard wine from Pago de Carraovejas, crafted exclusively in exceptional vintages. The 2021 harvest was marked by a rainy winter that promoted vegetative balance and allowed for a homogeneous development of the vineyard. Budding occurred at the end of April, without any climatic or health issues, and yields were adjusted through thinning to achieve maximum quality. The vineyard, planted in 1994 on a slope of over 30%, is surrounded by a pine forest that provides protection and enhances biodiversity in the environment.
The harvest of Cuesta de las Liebres 2021 was carried out manually, with a first selection in the vineyard and a double sorting table in the winery. After destemming, the berries were transferred by gravity to small wooden vats, where alcoholic and malolactic fermentations took place spontaneously, respecting the terroir's personality to the fullest. The wine remained for 24 months in new French oak barrels of extra-fine grain, refining until achieving exceptional structure and complexity.
