Colegiata Rosado 2025 is an excellent representative of modern-style rosé wines that are currently thriving. A young rosé, made from the Tinta de Toro (tempranillo) variety, it stands out for its pleasant and pronounced fruity notes. Enjoy it on its own or paired with fresh and light fish and seafood dishes.

Colegiata Rosado 2025 is part of a line of wines with which Bodegas Fariña pays tribute to the Colegiata de Toro, an architectural jewel from the 12th century. For the production of this single-varietal rosé made from tempranillo, the grapes are destemmed and macerated for 12 hours at 10º C. Afterward, the juice is bled off, and alcoholic fermentation takes place at a temperature of 15º C. This wine, without barrel aging, stands out for its pleasant fruity notes (peach and tart fruit) and a balanced, fresh palate. These qualities make it the ideal wine to pair with all kinds of appetizers, fish, seafood, salads, white meats, and fresh cheeses.

Bodegas Fariña was founded in 1942 by Salvador Fariña, one of the most prominent figures of the D.O. Toro. His son Manuel continues his father’s great work and currently leads the Zamora-based winery. The winery produces its wines through a perfect combination of the most modern techniques and the traditional methods of the region. The result: wines with character, fruity, structured, fresh, and pleasant. The new wines of Toro.

Tasting notes

Colegiata Rosado displays a striking strawberry pink color.

On the nose, aromas of violet and fruits (strawberry and peach) can be appreciated.

On the palate, it is fresh, pleasant, and with good intensity.

The winery

Bodegas Fariña

The D.O. Toro would not be the same without the work carried out over the years by its most emblematic winery: Bodegas Fariña, a family-owned winery, pioneering, innovative, and a benchmark in the region. It is the only winery that has been present since the origins of the designation and the firm responsible for the great leap in quality achieved by its wines.

Following in the footsteps of the founder, Salvador Fariña, who began his work in a rudimentary winery dug into the ground in Casaseca de las Chanas, Manuel Fariña López turned this winery into the spearhead of the Tinta de Toro variety. He was a pioneer in Toro in applying winemaking techniques used in the world's most important wine regions, such as fermentation in stainless steel tanks, temperature control during fermentation, and selecting the most suitable barrels for aging wines. A series of innovations that laid the foundations of what many call “the great miracle of Toro”; changes that made it possible to move away from the bold and somewhat heavy wines of a past era to create powerful and elegant wines that have made the D.O. Toro a leading region.

Bodegas Fariña has over 300 hectares of its own vineyards, a true guarantee when producing high-quality wines in the area. Today, Manuel (Manu) Fariña Pérez, son of Manuel and grandson of Salvador, stands as the third generation of winemakers at the winery.
