Specifically, this red wine is sourced from small plots, the lowest among the winery's vineyards, cultivated with old Mencía vines (over 60 years) in goblet training on clay soils. Manual harvesting and long fermentation of over two months in 5000 l wooden vats. The wine then matures for two months with its own lees and skins, and finally moves to second- and third-year French oak barrels to age for 12 months.
Each year, the winery incorporates the results of its research on viticulture and winemaking techniques into this wine, making it a red wine in constant evolution.

In the early 1980s, a time when many farmers in Bierzo were getting rid of their vines because they were not generating significant profits, Nemesio Fernández began acquiring old vineyards in the best areas of this Leonese region, around Valtuille. It was not until 1989 that the Casar de Burbia project was launched. Isidro, Nemesio's son, is now at the helm of this winery based in Carracedelo.
Casar de Burbia boasts a fantastic viticultural heritage based almost exclusively on the mencía variety.
