A selection of the best grapes of the callet variety, grown on clay-limestone soils in the own vineyards of the Mallorcan firm Can Axartell, is the origin of Can Axartell Terrum 2021, a red wine of certain complexity and friendly character, very versatile and easy to drink, which was made following the principles of organic viticulture and through the characteristic gravity vinification that is the hallmark of the island winery.
The Can Axartell winery was founded in 2013 with the mission of producing wines that express the Mallorcan winemaking tradition and, since then, they have been developing their project by cultivating native and foreign varieties in the 34 hectares of vineyards on the estate and 22 more spread throughout the island of Mallorca. The winery is distinguished by its design around the gravity method, which aims to reduce the use of mechanical elements for transport and pumping, relying exclusively on the Law of Gravity for the movement of grapes and wine, from the reception of the fruits to the final bottling process.
To produce this red wine under the geographical indication V. T. Mallorca, the grapes are harvested manually and, once in the winery, after a careful selection, they are transferred to stainless steel tanks for alcoholic and malolactic fermentation at controlled temperature. The process culminates in a measured aging in French oak barrels to give rise to this subtle red wine with fruity aroma and silky texture.
The Mallorcan red wine Can Axartell Terrum 2021 pairs well with all kinds of rice dishes and white meats.
Can Axartell Terrum has a cherry red color with bluish hints, of light-medium layer. Clean and bright.
On the nose, its aromas of wild red fruits stand out, complemented by a background of cocoa and light spicy nuances.
On the palate, it shows its lightness and subtlety along with a very pleasant acidity throughout its journey. Velvety character and pleasant tannicity finished with a long and persistent finish.
Can Axartell is the perfect combination of tradition and modernity when it comes to Mallorcan viticulture. The estate, which includes vineyards, forests, mountains, and streams, was abandoned until the 1990s, when the first vineyards were planted under the principles of certified organic production.
The innovative and modern winery was built in 2012, with a philosophy that continues to this day: respect for the grape, the environment, the people who help produce it, and, of course, the people who enjoy these wines. Following this way of doing things, the first wines were bottled in 2013, and since then, the attention garnered by this Balearic island winery has steadily grown.
The Can Axartell winery produces a rosé wine, two white wines, three red wines, and a selection of limited-edition wines. These wines aim to be an expression of Mallorcan winemaking tradition while also representing the new changes being made in the production of these wines. For this reason, local grape varieties coexist with foreign ones in a perfect ecosystem.
With the idea of offering the utmost respect for the wine, it is treated in the best possible way. As a result, the winery was designed around the gravity method, meaning that the grapes and wine move exclusively by gravity.
In short, Can Axartell produces wines that are the perfect companion for meals, but their true perfection lies in their ability to reflect the soul of the island of Mallorca.
