Billecart-Salmon Le Réserve is made from the varieties pinot meunier (40%), pinot noir (30%), and chardonnay (30%). The grapes come from the Vallée de la Marne, in Mareuil-sur-Aÿ (Champagne), where the vines grow in clay-limestone soils, in the best terroirs of the Marne. Its composition combines vintages from 2006 to 2019. Vinification is carried out in stainless steel tanks (92%) and oak barrels (8%), with partial malolactic fermentation. It is aged for 30 months in bottles on its fine lees.
Located west of Épernay, the Vallée de la Marne is one of the most significant areas for the production of champagne. It stands out for its geographical and varietal diversity, with limestone and clay soils ideal for vines. This region is also notable for the prominence of the pinot meunier variety (the protagonist in the coupage of this champagne), which is well adapted to the cooler and wetter climate of the valley.
Founded by the marriage of Nicolas François Billecart and Elisabeth Salmon in 1818, Billecart-Salmon is one of the few grandes marques of champagne that remains in the hands of the founding family. Seven generations of the family, now led by Mathieu Roland-Billecart, have made their name synonymous with greatness and elegance, as their sparkling wines remain among the elite of French wines. For instance, in 1999, the cuvée Nicolas François Billecart 1959 was chosen as the "Champagne of the Millennium" by a panel of experts during a tasting held in Stockholm, where 150 millésimes from the leading champagne houses were compared.
Located in the commune of Mareuil-sur-Aÿ, the winery tends to 100 hectares of vineyards and also sources grapes from another 300 hectares under its control, spread across 40 crus in Champagne. A large part of these vineyards comes from an area within a 20 km radius around Épernay, where the grands crus of the Montagne de Reims, the Côte des Blancs, and the Vallée de la Marne coexist.

Notably, their Billecart Salmon Brut from 1959 was named Best Champagne of the 20th Century at the famous Millennium Tasting in Stockholm held in 1999.
The key to Billecart Salmon's success lies in its vineyards. And not only in those they own (32 hectares) but also in those they manage (140 hectares). In total, 700 completely distinct plots that allow them to maintain the highest quality levels harvest after harvest. Another crucial factor is the careful selection of the dosage or expedition liqueur that Billecart's winemakers add at the end of the production process.
