Artífice Listan Blanco 2022 is a dry white wine from winemaker Borja Pérez, made entirely from the listán blanco grape variety from different areas of the island of Tenerife. This wine is produced by fermenting the different listán blanco vineyards separately. 20% ferments and ages in concrete, 8% ferments with skins in concrete for 25 days to provide greater aromatic complexity and is also aged in 500-liter barrels. The rest of the must ferments in barrels and then ages for 11 months in 500-liter barrels.
Borja Pérez is a young winemaker located in the northern part of the island of Tenerife. After the recognition of his previous project Ignios Orígenes, he decided to create the Artífice project to pay tribute to all those farmers who have made the field their way of life. The winery works with native varieties, always respecting the fruit, planted in soils composed of ash and rocks in an Atlantic climate where the trade winds appear.
Artífice Listán Blanco 2022 is a white wine under the D.O. Ycoden Daute Isora, which will be the ideal companion for dishes such as brothy rice and fish in sauce.
```Golden yellow color, clean and bright.
On the nose, it presents earthy aromas that evolve into smoky and floral touches, of wilted roses, laurel, and mineral notes.
On the palate, it is round, fluid, and herbaceous, dry, with aromas of ripe fruit (apple) and a smooth, velvety texture.
Artífice originates with the aim of paying tribute to all the people from the countryside who have made agriculture their way of life, while preserving, in some way, the winemaking tradition of the Canary Islands.
Although the Pérez family has been working in the wine trade for many years, it was in 2011 when the young Borja Pérez took the lead on this project in Ycoden Daute Isora. He transitioned from being a race car mechanic and fire truck driver to leading his own winemaking project called Ignios Orígenes.
For Borja Pérez, Ignios Orígenes had to be based on the unique characteristics of the area they are in: volcanic soils, an Atlantic climate influenced by trade winds, and unique grape varieties such as the white marmajuelo and the red listán negro, baboso negro, or vijariego.
After gaining recognition with the Ignios project, the winemaker from Tenerife created different wines under the Artífice brand. With this project, he preserves old vineyards from small local growers with low production, from whom he buys the grapes. In these vineyards, a reasonable viticulture is practiced, with good advisory work for the growers and minimal intervention in the winemaking process. The aim is to craft authentic wines, enhancing native varieties and always respecting the fruit.
In his winemaking approach, Borja Pérez does not reject technological innovations; he simply emphasizes that they should be used when necessary, but never to alter the wine's style. Pérez oversees all processes of winemaking, from working in the field to the sale of the final product.
