AN'R by Ànima Negra 2025 is born in the vineyards of Son Negre, in Felanitx, located in the southeast of Mallorca. Grown exclusively with the native callet variety, sourced from old vines over 30 years old, this wine faithfully reflects the character of the Mallorcan terroir. The soils, poor in organic matter, rich in minerals, and with low water retention, known as call vermell, give this rosé wine a unique personality.
The viticulture is based on absolute respect for the natural rhythms of the plant, with manual harvesting in 10 kg boxes. After harvesting, the grapes are cooled overnight at 2 ºC. A double manual and optical selection of the clusters is performed, followed by a cold skin maceration for 20 hours. Fermentation is carried out with native yeasts in stainless steel tanks at 16 ºC. Finally, the wine remains for four months in cement tanks to round out, preserving its freshness and varietal expression.
