After a journey that led him to work in wineries in Australia, the United States, Argentina, Chile, and the Spanish wineries Lurton, Tamaral, and Martín Códax, winemaker Kiko Calvo returned to his native Toro in 2015 to start his own project. Vinos Bigardo is a unique winery that produces, in his own words, a red wine that is “experimental, uncomplicated, with minimal intervention and, for now and by personal choice, outside the D.O.” To achieve this, Calvo has incorporated gravity into all processes and uses different tanks and barrels of various sizes, capacities, cooperages, and toasts for fermentation and aging, allowing for greater control over the fruit from each plot.
Vinos Bigardo also pays close attention to vineyard work, which is key to achieving the highest grape quality. The winery owns 20 hectares of family vineyards of tinta de Toro, spread across several plots located at an average altitude of between 620 and 750 meters above sea level. From each harvest, the best grapes are manually selected to produce Bigardo, currently the winery's only wine, which debuted with 2,000 bottles from the 2014 vintage.
