Valdespino

Bodegas Valdespino, one of the oldest wineries in Jerez and part of the Grupo Estévez, produces legendary wines in this D.O., such as its famous Sacristía, since 1910. Its Fino Inocente is an atypical wine due to the artisanal and traditional production methods it still maintains. Sourced from a single vineyard (Machamudo), it is the only one that still ferments in 500-liter oak barrels (nowadays, fermentation typically occurs in stainless steel tanks of about 50,000 liters) and has 10 criaderas, while the norm is two to three. The Valdespino building was constructed in the year 2000 and houses 20,000 American oak Jerez barrels, where all the winery's wines (Finos, Amontillados, Olorosos, Cream, and Pedro Ximénez) are aged.
