Pazo Baión

The Pazo Baión is an iconic 30-hectare estate located in the Salnés Valley, with a winemaking history dating back to the 17th century. The current 22-hectare vineyard of the native albariño variety was planted in 1970, and today it is over 40 years old, reaching an optimal stage for producing high-quality wines. The cultivation technique practiced here is one of maximum respect for the environment.

After passing through various owners, Pazo Baión was acquired in 2008 by Adega Condes de Albarei. Here, an ambitious winemaking project has been developed, focusing exclusively on producing wine from the estate's own harvest, following the model of single-vineyard or estate wines. Pazo Baión also stands out for its commitment to wine tourism and its social responsibility (5% of its revenue is allocated to the development of social programs).

The new winemaking facilities were designed in 2010 and are housed in a century-old modernist building, renovated and equipped with the best technology. From these facilities comes a single wine that bears the name of the winery: Pazo Baión, an albariño closely tied to its terroir, offering remarkable expressiveness. It is crafted by one of the country's most renowned winemakers: José Hidalgo. Its lees aging and subsequent time in the bottle (it is never marketed before eight months have passed since the harvest) ensure a magnificent evolution for the Pazo Baión white wine.
