Bodegas Tradición has a distinctive characteristic that sets it apart from other Jerez wineries: its philosophy is based on bottling only very old wines (VORS and VOS, that is, wines aged for more than 30 and 20 years respectively in Jerez casks). Furthermore, it is a winery committed to creating genuine wines, avoiding clarification, filtration, and cold stabilization processes. Some of its wines rank among the best in Jerez, such as the Oloroso Tradición VORS.
The recent history of Bodegas Tradición begins in 1998, when Joaquín Rivero decided to continue the family's winemaking tradition. Bodegas Tradición is the successor of one of the oldest firms in Jerez: CZ-J.M. Rivero, founded in the 17th century and recipient of numerous international accolades, as well as the title of Supplier to the Royal House of Spain and Portugal. In 1991, the CZ-J.M. Rivero winery was sold; shortly after, Joaquín Rivero began envisioning the creation of a new winery, which he named Tradición. His first step was to select wines from different soleras and very old, high-quality casks to continue their aging process.
