Without following fleeting trends, Comenge aims to craft a great wine—distinguished, personal, different from the rest; complex, combining power, elegance, character, smoothness, and flavor; a wine that retains the imprint of its soil, its climate, and the Tempranillo variety. With these principles, this small winery located in Ribera del Duero produces its wines. The characteristics of each vineyard and the expression of each variety dictate the time each batch of wine must spend in barrels. It is the plots themselves that define the different wines, individually striving for excellence in each one. Thus, every year is different, resulting in unique characters that nonetheless maintain the singularity of our wines. Bodegas Comenge meticulously works with small grape productions to create an authentic estate wine, reflecting the character of the land. Only about 140,000 bottles are produced annually. The respectful care of the vineyard requires many hours of work and effort. Similarly, the slow and meticulous selection of the harvest and the individual control of each barrel are key to maintaining the best quality year after year. This is the path the winery has chosen to craft wines designed for enjoyment—rounded, velvety, harmonious from the very first moment. In their commitment to preserving the biodiversity of their vineyards and creating a unique wine that reflects this biodiversity, they do not use artificial yeasts. Instead, they have sought an indigenous yeast within the ecosystem where the vines grow, on the grape skins, to ferment the wines, enhancing the best of Tempranillo: its color, its distinctive aromas, its velvety structure. And herein lies its originality: by not using industrial yeasts, to which all conventional winemaking processes are adapted, the winery's leaders devised a new model for fermenting red wines. During the first phase of the process, they work separately with the must and cold-macerate the solid parts (skins and seeds of the grapes), achieving a more efficient extraction of anthocyanins and polyphenols, which are responsible for the wine's color, aromas, and body, thereby extracting the best from each grape. The resulting wine is endowed with great aromatic intensity and a powerful structure, characteristic of great wines—potent yet elegant, flavorful, and rounded.
