Founded in 2001, the young winery Alta Alella was specifically designed for microvinifications, equipped with small tanks that allow each plot to ferment separately. Although the winery is equipped with the latest technologies for winemaking, priority is given to artisanal processes whenever possible; thus, racking is carried out by gravity (avoiding the use of pumps), pump-overs are performed without pumping, and red wine macerations are done using the "submerged cap" technique, which involves keeping the cap of skins and pulp below the wine level to enhance extraction. The sparkling wines of Cava Privat, belonging to Alta Alella, have impressed critics with their finesse and elegance. These are classy, well-crafted cavas, the result of meticulous work that does not go unnoticed and achieves its goal: they leave no one indifferent.
