The Galician Xose Lois Sebio began his professional journey in the wine world in 1992 as an assistant winemaker during harvests at several wineries in northern Spain. After working as a consulting winemaker for various wineries, he received a research scholarship at the Viticulture and Oenology Station of Galicia (Evega) to study ancestral red grape varieties complementary to mencía.
In 2001, he joined Bodega Coto de Gomariz, where, to date, he serves as technical director and winemaker. Since 2008, he has combined this role with Viños de Encostas, his own winery, and Encostas Wines, a consultancy specializing in natural, organic, biodynamic winemaking and viticulture. Under his personal label, he crafts high-quality wines in northern Spanish regions such as Rías Baixas, Ribeiro, Valdeorras, Bierzo, and Rueda. Among his celebrated and well-known creations are the white wines Súper Héroe and Salvaxe, as well as the red Hush.
