Javier and Roberto San Ildefonso arrived in the D.O. Toro in 1998, attracted by the potential of this winemaking region. Shortly after, they founded Bodegas Sobreño, a winery that today has been joined by the next generation of the family: Paloma San Ildefonso.

We produce elegant, balanced, velvety wines, with fruit and showcasing the variety and the terroir they come from. With these starting points, each one will display different notes of youth, wood, complexity, making it attractive, distinctive, and unique in its range.

Graduate in Business Administration and Management, Master in Leadership Skills, and Master in Viticulture, Oenology, and Wine Business Management.
Paloma San Ildefonso began her career in the wine sector at the family winery, Sobreño. To immerse herself in different winemaking concepts and philosophies, she traveled to Australia, where she first worked in a winery under the guidance of the great winemaker Philip Shaw, in Orange. Later, at the firm Giant Steps & Innocent Bystander in Yarra Valley, she focused on fieldwork.
