I like to strongly highlight the 'terroir' of origin, emphasizing differences between the various areas within the municipal district. In the wines, fruit always predominates over the toasted notes from aging. Wines with plenty of character and origin to enjoy.
Professional career
Internships in various wineries of the Calatayud and Cariñena appellations of origin in the years 2001, 2002, and 2003. Subsequently, he worked as a laboratory analyst at the Virgen de la Sierra winery, before becoming the technical director in 2009. Manuel Castro Gracia is also a consultant at Bodegas Bodem (D.O. Cariñena). Additionally, he produces his own wine: Lajas Finca el Peñiscal (D.O. Calatayud).
