Description of their own wines
All our wines are aged in barrels for a shorter or longer period of time; and a large part of them undergo malolactic fermentation in barrels, so their lees provide roundness. We do not aim to exceed the wood flavor but rather opt for roasted notes. The barrel helps to clean the wines and provides both stability and longevity, but it should not overshadow the character of the Tinta de Toro. We use French and American oak barrels, and for long aging, we prioritize the former. On the other hand, we also aim for a good rotation of the 1,000 barrels in our aging room, renewing a third of them each year.
