Professional career
Born in Colmenar de Oreja (Madrid) in 1953, he began working with his father Jesús Díaz in the family winery of the same name from a very young age. In 1979, fresh out of university, he definitively took charge of the enological direction of the firm, a role he continues to perform to this day. In 1996, he started a new, although brief, phase as an enological consultant in wineries of great tradition and prestige (Manzaneque, Viñedos Mejorantes, Cooperativas de El Álamo and San Martín de Valdeiglesias), which concluded in the year 2000 when he became part of the Technical Department of Vinoselección.

Graduate in Biology from the Complutense University of Madrid and Master in Viticulture and Oenology from the Higher Technical School of Agricultural Engineers.
