Coming from a small village in Zamora, Fuentespreadas, within the Tierra del Vino region, José Manuel is the son of a viticulturist. Since childhood, his environment for growth was the countryside and his interaction with it.

In 2009, he worked as the winemaker responsible for the winery and winemaking operations at Bodega Numanthia. Since 2015, he has combined his role as a consultant at the Argentine Achaval Ferrer with his winemaking work at Propiedad de Arínzano.

He studied Agricultural Technical Engineering specializing in Enology, later completing a master's degree in enology, viticulture, and marketing at the Polytechnic University of Madrid.
