Law graduate. The beginnings of Jaime de Carvajal in the wine world were in the International Division of a Jerez winery. After 20 years, he went on to manage a winery from the same group under the geographical indication Vino de la Tierra de Cádiz, where he already produced red wines that included contributions from the local Tintilla de Rota grape. In 2013, Jaime de Carvajal founded his own company dedicated to exporting to Mexico, and almost simultaneously, he started his first project as the creator of his own wine: Cobijado, also protected by the geographical indication Vino de la Tierra de Cádiz. In the following years, Carvajal embarked on the search for new ‘terroirs’ to apply his oenological concept, expanding his portfolio with a rosé in Somontano: Son de Rosa; and an unfiltered oloroso from Jerez: Carvajal; as well as producing an artisanal gin: Lobb.
