Although the winemaker's personal taste is very diverse (passionate about complex white wines, carbonic maceration reds, but also classic long-aged wines, sweet wines, biologically aged wines, sparkling wines…), all their wines share a common profile: friendliness on the palate. These wines are meant to be enjoyed, which is why special attention is given to phenolic ripeness, the extraction of compounds from the grape skins during winemaking, and the preservation of acidity. The aromatic profile may vary, as this is where the distinctive spark of the wine lies, but on the palate, the aim is for balanced, rich, long, and silky wines.
