"Only with the best grapes can great wines be made. This phrase sums up my starting point when it comes to making wines and, therefore, almost all my effort is focused on the proper care and management of the vineyard for this purpose. In the case of the Garnacha wines from La Casa de Monroy, we only select the best grapes from our finest old vines. Vines that our family has been cultivating for more than 70 years. We harvest only when the grapes reach their peak ripeness, so they convey all their particularities and virtues. We aim for wines of high expression, with great intensity on the nose, full of fruit and other more complex nuances. On the palate, they must be long, round, and voluminous but without lacking freshness and a solid structure. Barrel aging must be tailored to the wine and the variety, so it enhances rather than masks or diminishes it."
