In Chinchón, a region with a winemaking tradition, the vineyard of the Señorío de Val Azul winery extends over 9 hectares, where a manual selection of the best quality grape clusters is carried out at their optimal ripeness, along with special care in the production process. The result is a small production of high-end wines, with the "union" of the finest French grapes—merlot, cabernet, and syrah—rounded out with tempranillo and aged in French oak barrels. This results in the wines "Val Azul Saborea Madrid," "Val Azul," and "Fabio," which boast an excellent aromatic palette, a balanced and harmonious flavor profile, all marked by the deep character imparted by the limestone soils of Madrid and its climate. As important as the soil and climate are, so too are the quality grapes harvested to produce only 35,000 bottles. The resulting wines have been awarded on various occasions (Baccus, Zarcillo, etc.).
In addition to our wines, the winery is integrated into Madrid's wine tourism, offering tours throughout the entire complex, including the vineyards, production, and aging facilities, as well as wine tastings, corporate meetings, and various activities always related to wine.
