These are wines where respect for the vineyard and the soil takes precedence above all else. Only with the best grapes from the best vineyards can the finest wines be crafted.
The plots are allocated depending on the age of the vineyard, the type of soil, yields... Quality parameters that the winery establishes to create wines that inspire emotion. With this, we aim to preserve the potential of each vineyard and produce flavorful wines with the fruit and structure necessary to withstand barrel aging.
Three out of the four wines of the winery (CAIR: crianza, 14 months in barrel; TIERRAS DE CAIR: reserva, 24 months in barrel; and PENDÓN DE LA AGUILERA: 27 months in barrel) are aged in new barrels every year and undergo malolactic fermentation and aging in these barrels. This results in wines where the fruit and barrel aromas are more harmoniously integrated. The goal is to create wines that are intense, flavorful, and complex, while respecting the fruity aromas of the grapes and the typicity of the soil.
