Description of their own wines

Although most of the wines are under the DO Penedès, the truth is they come from a land like no other: the Massís del Garraf, a large calcareous mass near the sea. Both factors, the limestone soils and the sea breeze, give a very distinctive character to the wines of Can Ràfols dels Caus.

Aware that good wines can only come from good grapes, from balanced vineyards where yields allow for proper ripening, they choose to avoid synthetic chemical products, using only organic fertilizers, hand-harvesting each vine, and respecting spontaneous fermentations (without adding selected yeasts), in order to obtain the best possible wine that faithfully expresses the place where it is born.

Professional career
In 1979, Carlos Esteva settled on the estate he inherited from his grandfather in the Garraf massif and began bottling the first wines (which until then were sold in bulk), planting new vineyards with little-known or even unprecedented varieties in Spain, and experimenting with new winemaking methods. Self-taught, he learned from other enologists and from numerous trips visiting vineyards and iconic wineries. He is currently a member of the prestigious International Academy of Wine.
