The sercial (or cercial) is a white grape whose late ripening allows it to retain a high acidity, its hallmark. Wines made with sercial aim to produce dry wines, suitable as an aperitif.
Synonyms
After the phylloxera of the 19th century, the grape spread to Iberian Portugal, where it is known as Esgana or Esgana Cão. In this sense, and for unknown reasons, the Gascony grape Ondenc was given the name Sercial when planted in Australia.
