The Albariño variety is the star of the Galician vineyard and the D.O. Rías Baixas, its stronghold par excellence. Valmiñor 2025 is produced from grapes from vines aged between 20 and 40 years, cultivated on slopes within the O Rosal subzone. The harvest is carried out manually, in 20 kg boxes. On entering the winery, the grapes passed through a selection table.

The O Rosal Valley is one of the five subzones of the D.O. Rías Baixas and, together with the Salnés Valley, one of the most renowned. It is located in a privileged setting where the Atlantic and the Minho River meet, and it is distinguished by a special microclimate that favours longer ripening cycles.

Adegas Valmiñor was founded in 1997 with the aim of producing high-quality whites and positioning itself at the forefront. It has 34 hectares of its own vineyard in the D.O. Rías Baixas, in the O Rosal subzone. Its philosophy rests on vineyard selection, meticulous care of the grapes, and the application of advanced technologies to craft a range of wines with their own personality, such as Valmiñor 2025.

Making process

Winemaking

Monitoring and quality control of Albariño in the vineyard until full ripeness. Manual harvest in 16 kg boxes. Table for cluster selection. Cold maceration (10°C) for 6 hours. Gentle pressing of the grapes. Clarification by flotation in stainless steel vessels. Alcoholic fermentation at a controlled temperature of 17°C for fifteen days. Tangential filtration and bottling in an inert atmosphere. Rest in bottle for a month prior to market release.

Pale straw-yellow with green and lemon reflections. Bright and with good legs. 

Nose

High intensity on the nose where primary and varietal aromas predominate, such as mandarin citrus and orange zest, stone fruits like apricot and peach with a light hint of lime. It also presents pleasant floral notes of orange blossom and white flowers.

Mouth

The palate is fresh, lively and enveloping, with a good structure and with very well-integrated acidity. It shows a good level of richness. The attack is soft and pleasant, with a finish that has a slight bitter note, fruity and very long.
