Sitta Doliola Albariño 2017 is the most traditional version of orange wine produced by Attis Bodega y Viñedos. The respect for traditional methods, which guides Attis Bodega y Viñedos in the production of their wines, is clearly evident in Sitta Doliola Albariño 2017, their highest-end orange wine or orange wine. Derived from the Latin word dolium, a type of clay jar used for transporting and storing solid and liquid foods, including wine, its name alludes to the nature of the vessel used for its maceration, a key process that gives this white wine all the uniqueness that makes it special.
From the heart of the Valle del Salnés come the grapes from old vines, between 35 and 40 years old, that make up Sitta Doliola Albariño 2017. To bring it to our glass, Attis Bodega y Viñedos subjected the hand-selected and destemmed fruits to spontaneous alcoholic fermentation in clay jars. In the same 380-liter vessels, the musts fermented with their skins for 10 months, resulting in a white wine with a daring profile, very different from the classic Galician Albariño.
Attis Bodega y Viñedos is one of the most attractive and interesting wineries in Rías Baixas. Although most of their wines are subject to the D.O., the originality of Sitta Doliola Albariño 2017 is such that it is marketed without that certification. However, the strict quality standards managed by this family firm equate it to the rest of their creations that are indeed certified.
