Rooted for centuries in the Bibei River valley, the Palomino variety has been an essential part of the vineyard in this subzone of the D.O. Valdeorras, giving rise to unique whites such as Sede e Fame 2020. Its name refers to the two figures carved on the façade of the sanctuary of the Order of the Charismatics of the Ermitas, a temple with significant historical influence in the region and visible from the winery's own estate. Tension, freshness, and mineral character in a magnificent white wine from old vines, with vegan certification.

The late harvest white wine Sede e Fame 2020 is born in the As Ermitas area, in the Val do Bibei subzone (D.O. Valdeorras), where old vines of Palomino are cultivated across four small parcels of sustainable viticulture. The vineyard, arranged in stone terraces from the early 20th century, is located at 750 meters of altitude with a south/east orientation, on poor and shallow soils of decomposed granite sand and quartz schist, in an environment with a strong Atlantic influence and continental character that promotes a slow and precise ripening of the grapes.

The harvest was carried out by hand during the first week of October, and then the wine fermented spontaneously in clay amphora and barrel. Its aging lasted 24 months in these same vessels until bottling.

Virgen del Galir signs this wine with a careful focus on origin and sustainable viticulture. With Sede e Fame (“Thirst and Hunger”), the winery continues its tribute to the sanctuary of the Order of the Charismatics of As Ermitas. On the sanctuary’s façade, two faces, Sede and Fame, represent the pursuit of spiritual happiness.

Tasting notes

It presents a bright straw yellow color to the eye.

Mineral nose, austere and subtle, sharp with iodine hints, along with balsamic notes and wet stone.

On the palate, it is a sharp wine with good acidity, verticality, and tension. The minerality of the soil from which it originates gives it great personality.
