La Sacedilla 2021 originates from the fruits harvested from the estate of the same name, located on the hillside of Monte Yerga, from a 5-hectare vineyard planted with old vines in clay-limestone soils with rounded stones and low fertility. The vineyard is oriented and managed to promote optimal phenolic ripeness; at Bodegas Pastor Díaz, the predominant cultivation method is trellised (approx. 70%), while the remaining 30% is maintained in goblet vines. The winemaking process mainly features Tempranillo as the principal variety, complemented on the estate by small plots of Garnacha and Graciano.
La Sacedilla 2021 is produced with complete destemming and a five-day cold maceration prior to alcoholic fermentation, which occurs in small capacity tanks with measured pump-overs at controlled temperatures; strict ripeness control and nocturnal harvests are employed to preserve the fruit's freshness. After fermentation and malolactic fermentation, the wine matures for 12 months in American and French oak barrels, followed by a minimum of six months fining in bottle before release.
Bodegas Pastor Díaz is a family-owned company based in Aldeanueva del Ebro, with a viticultural heritage dating back to the 19th century, managing around 130 hectares, many of which are situated on the slopes of Monte Yerga. The Gonzalo Pastor family has selected plots and soils suitable over generations; the winery prioritises respect for traditional winemaking and aims to express the terroir, with José Hidalgo as the head oenologist responsible for this project. Their range includes young wines, rosés, crianza, reserva, grand reserva, and an organic wine, reflecting their philosophy of balancing tradition with vineyard stewardship.
Thanks to its structure, ripe fruits, and spicy notes derived from the wood, this crianza pairs very well with roasts and grilled red meats, stews, light game casseroles, lamb dishes, mushrooms, and cured or semi-cured cheeses that complement its body, acidity, and soft tannins.
Appearance: Deep ruby with a slightly garnet edge, clear and bright.
Nose: Intense aromas of well-matured black fruits (blackberry, plum) and nuances of wild blue flowers, harmonised with a background of American and French oak where spices such as vanilla, coconut, and clove emerge.
Palate: Powerful and fresh, with good acidity; balanced and tasty, with sweet and soft tannins, hints of black liquorice, volume, and a long finish full of aromatic sensations.
Pastor Díaz is a family-owned winery located in the Rioja town of Aldeanueva del Ebro. The family has been dedicated to viticulture for several centuries, and interestingly, the last four generations have been led by men with the same name: Gonzalo Pastor. Over time, the family has acquired the best types of soils, altitudes, and the most optimal orientations for their vineyards. In the winery, there is maximum respect for traditional winemaking. Their range of wines includes young reds, crianzas, reservas, gran reservas, and an organic wine, and it is composed of three brands: Castroviejo, Valdejimena, and Castro Real.
Currently, Bodegas Pastor Díaz manages around 130 hectares of vineyards located mainly on the slopes of Mount Yerga, one of the most exclusive areas for vine cultivation in the D.O.Ca. Rioja. Seventy percent of the vines are grown on trellises, while the remaining 30% are cultivated in the traditional bush vine method. The vineyard's altitude ranges between 350 and 600 meters. The winery primarily cultivates tempranillo, along with a small amount of garnacha and graciano.
