Rippa Dorii Crianza 2022 is born in one of the highest areas of the D.O. Ribera del Duero. Its origin lies in a selection of vineyards from the Fuentecén plateau, at 900 m altitude, in the heart of the Burgos Ribera del Duero, where the grapes ripen slowly and provide the necessary acidity to become a very fresh and youthful wine. A 'ribera' from high-altitude vineyards, part of the most ambitious project of the Pérez Cuevas family, creators of the powerful Ontañón brand in Rioja and Bodegas Queirón.

Rippa Dorii Crianza 2022 is a single-varietal tempranillo created from a selection of vineyards owned by the Pérez Cuevas family in the páramo of Fuentecén (Burgos), at 900 meters above sea level, one of the highest and coolest areas of the appellation. These are vineyards over 25 years old planted on diverse soils, ranging from stony and clay-rich to white limestone soils.
The first selection of tempranillo clusters is carried out in the vineyard itself. Once at the winery, the grapes undergo a pre-fermentation maceration at 10º C for three days. Alcoholic fermentation lasts for 18 days, with temperatures between 22 and 26ºC, involving daily pump-overs and punch-downs. Malolactic fermentation is divided into batches and takes place both in tanks and barrels. Finally, it ages for 12 months in French oak barrels (60%) and American oak barrels (40%) with different toasting levels.

With good structure and volume on the palate, it is flavorful, balanced, fresh, with fine tannins and a persistent finish featuring spicy and black fruit notes.
