Making process

Winemaking

Rippa Dorii Ars Edition 2024 is made from Tempranillo with a vinification designed to preserve the fruit expression and achieve a balanced and direct red wine in the glass.

After a cold pre-fermentation maceration lasting three days, the extraction is gently carried out to highlight colour and aromas without stressing the raw material. This is a brief, precise phase. Subsequently, the alcoholic fermentation proceeds slowly and extended over more than 14 days, always at controlled temperatures between 21 and 23 ºC, to maintain the varietal profile and the finesse of the blend.

During the final stages of alcoholic fermentation, malolactic fermentation is induced to achieve a rounder integration and a softer texture in the wine. The result is a sober, carefully crafted wine focused on fruit and harmony.

Aging

Rippa Dorii Ars Edition 2024 has been aged for nine months in new oak barrels.

During this period, the wine remained in first-use barrels, with 40% American oak and 60% French oak of varying toasts, aiming to integrate the wood without overshadowing the fruit. No specific bottle ageing period is indicated before its release to the market.

Rippa Dorii Ars Edition 2024 comes from family-owned vineyards located in the heart of the Ribera del Duero in Burgos, in the Riaza Basin and the Fuentecén plateau, with vines over 15 years old planted on diverse soils, from stony clay soils to white limestone. The altitude and freshness of the environment promote slow, even ripening, in an area where the vintage was marked by spring frosts, some stormy episodes at the beginning of summer, and rainfall in September, although mild temperatures and water availability allowed the vines to develop with balance. It is made from a single variety of Tempranillo or Tinta del País.

Rippa Dorii Ars Edition 2024 is based on traditional and highly precise viticulture, centred around family-owned vineyards selected in the heart of the Ribera del Duero in Burgos, in the Fuentecén plateau. These plots are over 15 years old and planted on highly varied soils — from stony, clay-based areas to white limestone soils — cultivated with yields below 5,500 kg per hectare to promote grapes that are more concentrated and of higher quality.

The winery also performs a rigorous selection in the vineyard itself, with direct grape tastings to determine the ideal harvest time, and a staggered picking process that allows for each plot to be harvested at its perfect ripeness. The result is attentive viticulture focused on balancing the vineyard, the vintage rhythm, and the character of Tempranillo or Tinta del País.
