Pago Florentino Eco 2023 was produced from a selective harvest that began on 7 August, with Cencibel bunches gathered in 15 kg boxes. This choice enabled us to work exclusively with grapes at their optimal ripeness, carefully handling the raw material from the vineyard to the winery and ensuring a more precise production that stays true to the character of the estate.
Winemaking
Pago Florentino Eco 2023 is crafted with Cencibel and a very precise vinification process designed to preserve the authentic expression of the fruit. After destemming and gravity settling in stainless steel tanks, the grapes remain for 3 days in cold maceration, a brief phase that promotes extraction without losing freshness. Subsequently, the alcoholic fermentation takes place in the same stainless steel tanks, always at a temperature below 24 ºC, aimed at producing a balanced wine with a friendly profile.

Aged for 12 months in new French and American oak barrels.

Pago Florentino Eco 2023 comes from the La Solana estate in Malagón, with Cencibel vines located at the foot of a hill, protected to the north by a mountain range and south-facing towards two natural lagoons, a positioning that promotes good sun exposure. The vineyard is planted on calcareous soils with surface galets, with a subsoil of high-capacity clay and a layer of slate that acts as a pond, creating perfect drainage and moderate water stress during summer.
Climate
At the La Solana estate, the Cencibel vines grow under an extreme climate that distinctly shapes the character of the wine. Winters drop below zero and summers can exceed 40 °C, with scarce rainfall. This pronounced temperature oscillation and the natural protection of the Sierra favour slow and balanced ripening.

Pago Florentino Eco 2023 comes from the La Solana estate in Malagón and is produced with Cencibel within an eco-friendly approach that respects the environment. The vineyards, located at the foot of a hill and surrounding the winery, benefit from a surface of calcareous soils with calcareous-clay and a layer of slate that helps to moderate summer water stress. This combination promotes balanced ripening and precise fruit, a true reflection of the vineyard and its extreme climate.
