General Information

Microcósmico Macabeo 2024 is born in the Sierra del Jalón, in Alpartir (Aragón), where the vines are cultivated in goblet training and dry farming, under a continental climate with Mediterranean influence. The altitude of over 500 meters and the poor, stony soils provide tension and minerality to the grapes, which are hand-harvested to preserve their integrity. These extreme conditions impart freshness and character to the wine.

The winemaking process begins with destemming and a 20-hour maceration without the addition of sulfites, to enhance primary aromas. The must ferments with native yeasts for 15 days in underground concrete tanks at a controlled temperature (17-18 °C). After fermentation, the wine rests on its fine lees for six months without bâtonnage, which adds volume and complexity without losing freshness. This traditional method allows Microcósmico to retain its pure and expressive character.
