Microcósmico Garnacha 2024 is born on the slopes of the Sierra del Jalón, in Alpartir (Aragón), where the Garnacha tinta vines are grown as bush vines under dry farming conditions, in a continental climate with Mediterranean influence. The poor, stony soils, combined with the altitude and the cierzo wind, bring freshness and tension to the grapes, which are hand-harvested to preserve their integrity. This extreme environment imparts the wine with its austere and mineral character.
The winemaking process is carried out with the utmost respect for tradition: 20% of the grapes are manually foot-trodden before maceration, which lasts 28 days in above-ground concrete tanks. During this time, daily manual punch-downs are performed to ensure gentle extraction. Fermentation is carried out with native yeasts, and after malolactic fermentation, the wine rests for 12 months in underground concrete tanks, where it gains volume and complexity without losing freshness or varietal purity.
