M. Hostomme Blanc de Blancs is one of the classic champagnes in the portfolio of this winery. It is a blanc de blancs, meaning only white grapes are used in its production; specifically, Chardonnay from a Grand Cru in Côte des Blancs, where sustainable viticulture is practiced.
Once the grapes arrive at the winery, fermentation is carried out at a controlled temperature: 30% in 225-liter barrels and 70% in stainless steel tanks. Once bottled, it remains on its lees for 48 months. Three months before being released to the market, the bottles are disgorged to remove the lees residues and receive a dosage. The result is a golden-colored champagne with fine bubbles. On the nose, it is delicate, fresh, and floral, with notes reminiscent of acacia. It also presents riper notes of candied citrus. On the palate, it is very elegant, with citrus flavors such as lime, grapefruit, and orange.
The surname Hostomme, which originated from the Baltic, has been connected to viticulture in the Champagne region since time immemorial. After many ancestors dedicated to vine care, the Hostomme family created the brand in 1951 to label and market their wide range of champagnes. In 2005, the brand adopted the orange tone in its logo and communication, a color that currently defines and distinguishes it.
