Dominio de la Abadesa Verdejo 2025 originates, exclusively for Vinoselección, from a careful selection of old vineyards settled on flinty, rounded stony soils, a base that provides character and a lot of personality to this white made entirely from Verdejo.

The winery pursues a very precise winemaking, with skin-contact maceration, fermentation and ageing on lees in French oak barrels, together with batonage to gain body and depth. After that come clarification and stabilization, in a process that aims to polish the wine without sacrificing freshness or that suggestive profile full of fruity nuances that defines it.

Behind Dominio de la Abadesa Verdejo 2025 is Ontañón, a historic brand of Spanish wine, today guided by the fifth generation of the Pérez Cuevas family. Its way of understanding wine combines tradition, care for the vines and a contemporary vision, with projects also in Rioja Oriental and Ribera del Duero. A very well-made white, one of those that enters naturally and leaves a mark.

Making process

Winemaking

The winemaking began with a careful maceration of the grape skins, taking advantage of contact with the Verdejo grape to extract expression and nuance. Afterwards, fermentation took place in French oak barrels, where the wine worked with precision and preserved its fresh character. During the process, batonnage on the lees was applied, strengthening the volume and the sense of depth on the palate.

Dominio de la Abadesa Verdejo 2025 comes from a careful selection of old vineyards situated in Rueda, on gravelly soils of cobbles that favour good grape ripening and contribute personality to the wine. In this environment, shaped by the extreme conditions of the terroir of the D.O. Rueda, the Verdejo shows all its character, giving rise to a fresh, enticing white with plenty of fruity nuances.

The fourth generation of the Pérez Cuevas family continues, day by day, the tradition of viticulture in Rioja Oriental. Gabriel Pérez inherited the vineyards from the lands of his ancestors on the outskirts of the town of Quel, on the high slopes of the Sierra de Yerga. When Gabriel took the reins in the early 70s, he began producing wine from those vineyards instead of selling his grapes as had been done until then. He was determined to create a wine that embodied the region of Quel, where his family had deep roots and where he knew wines of great quality were born. Since then, Ontañón has been committed to the vineyards of these unique terroirs. Over the years, Bodegas Ontañón has expanded its expertise to iconic denominations such as Ribera del Duero, Rueda, and Navarra.
