Colegiata Rosado 2024 is an excellent example of the modern rosé wines that are currently enjoying great success. Colegiata Rosado 2024 belongs to a range of wines that are Bodegas Fariña’s tribute to the collegiate church (Colegiata) of Toro, an architectural gem dating from the twelfth century. The grapes were destemmed and macerated for 12 hours at a temperature of 10ºC. After that, the wine was bled off and fermented in stainless steel tanks at 15ºC. This wine, which is not barrel aged, is notable for its pleasant fruity notes (peach and tangy fruit) and balanced, fresh mouthfeel. These qualities make it ideal with all kinds of appetizers, fish, seafood, salads, white meats and fresh cheeses.
Bodegas Fariña was founded in 1942 by Salvador Fariña, one of the prominent figures of the D.O Toro. His son Manuel has carried on his great work and is now at the helm of the Zamora-based company. The winery produces its wines using a perfect combination of the most modern techniques and traditional local methods. The result: fruity, structured, fresh and pleasant wines with character. The D.O. Following in the footsteps of the founder, Salvador Fariña, who began his work in a rudimentary winery dug into the ground in Casaseca de las Chanas, Manuel Fariña López turned this winery into the spearhead of the Tinta de Toro variety. He was a pioneer in Toro in applying winemaking techniques used in the world's most important wine regions, such as fermentation in stainless steel tanks, temperature control during fermentation, and selecting the most suitable barrels for aging wines. A series of innovations that laid the foundations of what many call “the great miracle of Toro”; changes that made it possible to move away from the bold and somewhat heavy wines of a past era to create powerful and elegant wines that have made the D.O. Toro a leading region.
Bodegas Fariña has over 300 hectares of its own vineyards, a true guarantee when producing high-quality wines in the area. Today, Manuel (Manu) Fariña Pérez, son of Manuel and grandson of Salvador, stands as the third generation of winemakers at the winery.
