General Information

Considered as “the pride” of Domaine Nathalie & Gilles Fèvre, the centuries-old winery that produces it, Chablis Premier Cru Vaulorent 2021 is a single-varietal Chardonnay of great fullness, elegance, and charm, qualities enhanced by the partial 15-month aging on its own lees it underwent.

The origin plots of Chablis Premier Cru Vaulorent, located alongside others classified as Grands Crus, imbued it with all its character. The Chardonnay grapes used in its creation come from vines over 30 years old, facing southwest and, most importantly, planted in clay soils from the Kimmeridgian era, part of the Jurassic period, very rich in marine fossils. This unique composition endowed the wine with a pronounced minerality and high acidity.

Domaine Nathalie & Gilles opted in the winery for a vinification process that included 15 months of aging in new oak barrels (15% of the wine) and temperature-controlled stainless steel tanks (the remaining 85%). After blending and before bottling, the wine remained on its fine lees for approximately another 15 months. Chablis Premier Cru Vaulorent 2021 is a limited-production white wine with good aging potential, especially recommended for pairing with seafood (whether natural, cooked, or grilled) and mushroom dishes.

The winery

The history of the Fèvre family and Domaine Nathalie & Gilles Fèvre is inextricably linked. The origins of the saga date back to 1745, when the family was already dedicated to cultivating vineyards in Vaulorent, at the very heart of the French Burgundy region.

Over the years, the estate has undergone several expansions. Today, the winery boasts some of the most coveted terroirs planted with Chardonnay in the A.O.C. Chablis, including Les Preuses, classified as Grand Cru, and Fourchaume, Premier Cru.

At the helm of the estate are Nathalie and Gilles Fèvre, a couple who personally oversee both vineyard work and winemaking, based on sustainable, environmentally friendly, and traditional practices. All with the aim of offering, through their wines, the finest expression of the minerality and complexity of their remarkable terroir.
