New vintage of the wine produced by the Torres family in their wine project in the Ribera del Duero. Celeste Roble 2024 comes from vines at 895 m above sea level, “where the vines and the sky establish a magical connection,” states the winery. It seeks to express the most genuine Tempranillo, adapted to the soils and demanding climate conditions of the area. It has a brief ageing period of 3 months in oak, and is presented as fresh, with fruity intensity and a smooth palate.

Making process

Winemaking

Celeste Roble 2024 achieves a fresh and fruity expression of Tempranillo. At the winery, the grapes undergo a maceration of 15 days to extract colour and substance without losing vibrancy. Subsequently, the alcoholic fermentation takes place over approximately one week in stainless steel tanks, with temperature carefully controlled between 20 and 26 °C. The result is an accurate production designed to preserve the clean and direct character of the grape and its most genuine profile.

Aging

Soft and juicy on the palate. Celeste Roble 2024 undergoes a 3-month maturation in oak barrels following fermentation in stainless steel tanks under temperature control and a 15-day maceration. The bottle ageing period before release to the market is not specified.

Celeste Roble 2024 comes from vineyards located at 895 metres above sea level in the D.O. Ribera del Duero, in an environment where Tempranillo seeks a fresh and fruity expression adapted to the soils and the demanding climatic conditions of the region. Made by the Familia Torres for Pago del Cielo, this single-varietal Tempranillo spends 3 months in oak barrels after a 15-day maceration and fermentation in stainless steel tanks with temperature control. A short crianza that enhances its velvety, juicy profile with intense black fruit notes.

Pago del Cielo is the winemaking project of the Familia Torres (winemakers from Penedès since 1870) based in two privileged regions for vine cultivation, Ribera del Duero and Rueda. Tradition, commitment to quality, and passion for viticulture come together in this project led by winemaker Juan Ramón García, which began to take shape in 2004 with the purchase of a small winery in Fompedraza, in the Campo de Peñafiel region (Valladolid), and currently has 45 hectares of owned vineyards.

It also includes the winery that Familia Torres has in Villafranca del Duero, in Rueda, since 2014, with its 20 hectares of vineyards. Pago del Cielo produces seven labels: the tinto fino wines Pago del Cielo, the new icon of the winery, Celeste Reserva, Celeste Crianza, Celeste Roble, and 62 Millas al Cielo, under the D.O. Ribera del Duero, the white Celeste Verdejo (D.O. Rueda), and Celeste Rosé (D.O. Cigales).
