General Information

Cayuse Cailloux Syrah 2017 is a silky biodynamic red wine produced by the winery Cayuse Vineyards in Walla Walla Valley (Washington, USA). A single-varietal syrah from the first vineyard of the French-born winemaker Christophe Baron, who, since 1997, has worked under a philosophy of environmental respect, without insecticides, fungicides, or synthetic fertilizers. This careful treatment of the terroir, where the soil, plants, and animals that inhabit it form an ecosystem in perfect balance, earned it biodynamic certification in 2002.
 
The syrah variety grapes used to produce Cayuse Cailloux Syrah were harvested following the lunar calendar and promptly transported to the winery to preserve the varietal qualities to the fullest. After the fermentation of the grapes with native yeasts, the resulting wine rests in oak barrels for the precise time needed for refinement. 
 
Cayuse Cailloux Syrah is the flagship wine of the Washington-based winery Cayuse Vineyards. A fragrant red wine with intense aromas of black fruits and violets, hints of lavender, and suggestive smoky and olive notes. Seductive, full-bodied, and saline, it is a highly interesting and sophisticated wine, perfect for pairing with big game dishes, roasted lamb, and grilled red meats.

Tasting notes

It displays a beautiful ruby color with violet reflections.

Complex nose where aromas of black fruits and flowers such as violet or lavender stand out, followed by smoky notes and a minerality reminiscent of dry earth.

Voluminous and rich on the palate, attractive and intense. It reveals silky tannins and a prolonged and sophisticated finish with saline hints and umami sensations.
