La Cautiva 2022 comes from a unique vineyard within Gualtallary, in a location that shares its name. Situated at 1600 m, on sandy-clay soils with limestone and stones, this terroir imparts violet and floral notes, distinct from the typical herbaceous profile of the area. The extreme altitude provides natural acidity and tension, while the manual and sustainable viticulture ensures authenticity.
The winemaking process involves whole cluster fermentation with foot treading, followed by a post-fermentation maceration lasting 1 to 4 months. Subsequently, the wine is aged for 12 months in a 3000-liter French foudre, achieving a balance between structure and freshness without masking the identity of the terruño.
