Casa Madero Shiraz 2021 is one of the varietals from the prestigious Casa Madero, the oldest winery in the entire American continent, founded in 1597. This red wine, originating from the fertile Valle de Parras at the foothills of the Sierra Madre Oriental in Coahuila (Mexico), is a friendly and balanced wine crafted with the aim of expressing the full potential of the syrah variety that defines it. Aged for 12 months in barrels, it is an elegant, velvety, and full-bodied red, ideal to pair with grilled octopus or wood-fired red meats.

Aged for 12 months in French and American oak barrels, it combines fruity intensity, spicy notes, and a harmonious structure, making it an expressive, silky wine with aging potential.
 
The Valle de Parras is a true oasis at the foot of the Sierra Madre Oriental, in northeastern Mexico. This privileged enclave, with a semi-warm dry microclimate and an altitude of 1,500 meters above sea level, provides remarkable thermal amplitude between day and night, key to preserving freshness and aromatic concentration in the grapes. The vineyards are set on clay-sandy soils with good limestone levels, nourished by springs and underground water, ideal conditions for vine cultivation and responsible for the wine's balanced and structured character.
 
Fermentation takes place in stainless steel tanks at a controlled temperature of 26–28 °C, using selected yeasts. During this process, daily pump-overs are performed, adjusted after continuous tasting by the winemaking team to extract color, aroma, and structure with precision.
Subsequently, the wine ages for 12 months in medium-toasted French and American oak barrels, achieving a perfect balance between ripe fruit and the spicy, toasted nuances of the wood.
