In Alsace, a Gentil wine must contain at least 50% of grapes from the noble varieties of riesling, muscat, pinot gris, or gewürstraminer. A good example of this is the white wine Bott-Geyl Gentil d´Alsace Métiss 2021, a successful coupage of muscat, riesling, sylvaner, pinot blanc, and pinot gris, produced by Domaine Bott-Geyl winery following biodynamic principles and a philosophy based on minimal intervention.

For the production of Bott-Geyl Gentil d´Alsace Métiss 2022, the harvest of whole clusters is carried out manually in boxes, which are emptied by gravity into pneumatic presses, resulting in a must that will remain in decantation for 24 hours. Fermentation is carried out with native yeasts, and the resulting wine rests for a period of three to six months before being bottled. The result is a fresh and balanced wine, where fruit and sweetness stand out at first, but with a delicate acidity that harmonizes the whole.
Bott-Geyl Gentil d´Alsace Métiss 2022 is a white wine under the AOC Alsace with an aging potential of between 5 and 7 years, and is ideal to accompany all kinds of appetizers, roasted chicken, tempura, fish rice dishes, and cod.
On the nose, Bott-Geyl Gentil d'Alsace Métiss is straightforward, with medium intensity, where it unfolds aromas of white flowers and citrus.
On the palate, it is dry, fresh, and balanced. With a delicate, light, and pure taste, featuring plenty of fruit and a fine acidity.
