Botijo Blanco 2023 expresses the subtlety of white garnacha cultivated in the vineyards of Bodegas Frontonio in Valdejalón (25–50 years), organically farmed. It ferments with indigenous yeasts after a brief maceration and rests for 4 months on its lees in concrete tanks. The result is a bright white wine, with lively acidity and elegant creaminess.

Botijo Blanco 2023 is born in Valdejalón, in the La Canosa area (460 m above sea level), where the bush-trained, dry-farmed white Garnacha vines grow on clay-limestone soils with pebbles and a clear continental influence. The climate - with long hours of sunshine, cool nights, and the effect of the cierzo wind - preserves the acidity and enhances the herbaceous and citrus aromas of the variety.
After manual harvesting, the grapes undergo 30 hours of maceration without the use of sulfites, activating their primary aromas. The must ferments spontaneously over about 18 days in underground concrete tanks, maintaining temperatures between 18-20ºC, with its fine lees. It then rests for four months - without bâtonnage - on those lees, which contribute volume and a creamy texture without compromising freshness or fruity definition.
Since its foundation in 2008, Bodegas Frontonio, led by Fernando Mora MW and Mario López, has driven the recovery of Garnacha and Macabeo from century-old vineyards in Valdejalón. In their cave-house, they use low-intervention techniques and parcel-based vinification, aiming for the maximum expression of the landscape. Botijo Blanco is the clearest example of their commitment to elevated simplicity.
Botijo Blanco 2023 pairs perfectly with steamed or grilled fish, fresh seafood, light rice dishes, and seasonal salads. It is also ideal with goat cheeses, thanks to its vibrant acidity and clean mineral profile.
Bodegas Frontonio is a winery located in the Aragón region, founded with the aim of recovering historic vineyards and crafting distinctive wines. Established by Fernando Mora MW, Mario López and Francisco Latasa, the winery is characterised by its artisanal philosophy and respect for the terroir.
Its vineyards are located around Valdejalón, at altitudes ranging from 350 to 700 metres, bringing freshness and complexity to the wines. The soils are mainly limestone and stony, ideal for varieties such as garnacha, macabeo and other native grapes. The climate is continental with Mediterranean influence, marked by cold winters and warm summers, favouring balanced ripening.
The winery features facilities that combine tradition and modernity, including concrete tanks, large oak casks and barrels for ageing. Its winemaking methods are based on minimal intervention, spontaneous fermentations and respect for the natural expression of the grapes.
