General Information

Manzanilla Pasada Pastrana is the perfect result of aging for more than 12 years, following the traditional method of criaderas and soleras, from a strict selection of the finest palomino fino musts produced in the D.O. Jerez-Xérès-Sherry and Manzanilla-Sanlúcar de Barrameda.

The label of this old, pasada manzanilla was born in 1985, the result of a joint project by Javier Hidalgo and his friend, the Portuguese winemaker, Cristiano van Zeller. The goal was to produce a special fortified wine, from the grapes of a single vineyard of exceptional quality. For this, they chose the Pastrana estate, located in Pago Miraflores, an area with albariza soils and a strong Atlantic influence due to its proximity to the ocean. The finest palomino fino grapes that grow on the more than 50-year-old vines of its 14 hectares are the protagonists of this true gem, which was first marketed in 1997.The finesse of this raw material of the highest quality is accentuated by the mastery in the winemaking of Bodegas Hidalgo. The Manzanilla Pasada Pastrana was bottled without any type of filtration or cold stabilization, after completing, as the canons dictate, its biological aging under the veil of flor formed by the yeasts themselves, and an aging of more than 12 years in centenary American oak casks. The result is a sublime wine, full of nuances and personality, ideal to enjoy, especially, with all kinds of tapas and appetizers such as olives, almonds, pâtés, cheeses, or cold cuts; and also with consommés, fish, and seafood.

Tasting notes

Bright golden yellow color with small amber reflections.

Pungent and complex on the nose, dominated by saline and nutty aromas.

On the palate, it is very dry, powerful, and balanced. Persistent flavor, yet delicate and elegant.

The winery

The uniqueness of Spanish biologically aged wines is appreciated and admired worldwide. La Gitana is a clear example of winemaking tradition and contemporary flavors that continue to thrive, captivating and delighting enthusiasts. Bodegas Hidalgo-La Gitana boasts being one of the oldest wineries in the Jerez region. At the beginning of the 18th century, the pioneer of the lineage that would become one of the most important winemaking families in Sanlúcar de Barrameda, the Hidalgos, set foot in these lands. Since 1972, the family has been dedicated to the production of manzanilla, earning a well-deserved reputation as quality producers by the early 19th century. Since then, the winemaking method has not changed: grapes from their own vineyard, artisanal harvests, vinification through the solera and criaderas system, and manual rackings.
