Sparkling
Sparkling wine comes from a second fermentation in a closed container (generally a bottle). This second fermentation produces carbonic gas, which is responsible for the bubbles and the foam, as well as the increase in pressure. When the bottle is uncorked and the sparkling wine is served in a glass, the foam that is formed is considerably long lasting, followed by a constant stream of bubbles. The most iconic Spanish sparkling wine is Cava.
