This is a historic and traditional Cava with elegant bubbles. Made from the classical varieties grown in the Denominación (Macabeo, Xarel-lo and Parellada), it underwent a second fermentation followed by a long period of ageing in contact with the lees.
To speak of Codorníu is to speak of the inventors of Cava and of a firm that’s currently synonymous with quality. The winery, a national art historical monument, is a key example of Catalan Modernist architecture and is located in Sant Sadurní d’Anoia (Barcelona).
Codorníu is underpinned by the history of a family of grape growers that dates back to the sixteenth century. It’s undoubtedly the oldest family-run firm in Spain and one of the oldest in the world. The earliest documented reference to Jaume Cordoníu’s activity as a grape grower can be traced back to 1551. Another key date is 1659, the year that heiress Anna Codorníu married grape grower Miquel Raventós. Since then the Raventós surname has been inextricably linked to the winery. Another member of the family, Josep Raventós Fatjó, went down in history for being the first person in Spain to make Cava using the Traditional Method (the method employed to produce champagne), establishing a new industry in the region.

Non Plus Ultra is a Cava with an elegant pale colour and final bubbles. It’s notable for its cleanness and freshness and great balance between varietal notes (citrus fruits, apple, almond blossom) and aromas from more than 15 months in contact with the lees of the yeasts (nuts, honey, toast).
